Homemade Mousssaka


This was beyond EASY and super delicious (might I add healthy too).

1)  Clean the eggplant with veggie wash to remove all the yucky pesticides.
2)  Broil on high for 30 min.
3)  Remove the skin (I left a little for some fun texture).
4)  Place into a BlendTec (or strong blender)
5)  I added 2 tsp. of curry powder, pepper, and salsa (sounds terrible, but it was yummy!!!)
6)  Blend it all up and ENJOY!!!!
